Ingredients

- low-fat cooking spray, for frying
- 1 small onion, sliced
- 1 garlic clove, crushed
- 50 g baby carrots, halved
- 50 g green beans
- 50 g baby sweetcorn, halved
- 1 tablespoon tomato puree
- 200 g tinned chopped tomatoes
- 1/2 teaspoon chili flakes
- 1/2 teaspoon ground cinnamon
- 200 g red kidney beans, drained and rinsed
- 200 ml vegetable stock
Recipe
- 1 spray the pan with the cooking spray and fry the onion and garlic until soft.
- 2 add the remaining ingredients and seasoning.
- 3 bring to the boil and simmer (covered) for 20 minutes.
