Cherry Coconut Bars

- 3/4 cup all-purpose flour
- 3 tablespoons confectioners' sugar
- 3 tablespoons butter, cold
- 1 egg
- 2 egg whites
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup maraschino cherry, quartered
- 1/3 cup walnuts, chopped
- 1/3 cup flaked coconut
Recipe
- 1 preheat oven 350.
- 2 in a food processor place flour and confectioners sugar; cover and process until blended. add butter, cover and pulse 15 times, until mixture resembles fine crumbs. press into 9 in square baking pan coated with nonstick cooking spray. bake at 350 12-15 mins until lightly browned. cool on wire rack.
- 3 for filling combine the egg, egg whites, sugar, and vanillain a bowl.
- 4 combine the flour, baking pwd, and salt; add the egg mixture. stir in cherries, nuts, and coconut. spread over the crust.
- 5 bake for 20-25mins or until firm. cool on wire rack. cut into bars, refridgerate leftovers.
