Curry Carrot Apple Bisque

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 5 medium carrots, peeled and sliced
  • 1 celery rib, sliced
  • 3 apples, peeled and sliced
  • 1 tablespoon onion flakes
  • 1 tablespoon chicken bouillon powder
  • 1/4 teaspoon marjoram
  • 1/4 teaspoon thyme leaves
  • 1/4 teaspoon curry powder
  • 1/8 teaspoon paprika
  • 1/2 cup water
  • 1/2 cup cream or 1/2 cup coconut milk

Recipe

  • 1 place all ingredients except cream in a medium saucepan; cover and bring to a boil.
  • 2 reduce heat to simmer and cook 20-25 minutes, until vegetables are tender.
  • 3 puree cooked vegetables. add cream and heat through.
