Chicken Dijon Shepherds Pie

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb boneless skinless chicken breast, cut into 1/2 inch pieces
  • 1 cup onion, coarsely chopped
  • 2 cups frozen mixed vegetables
  • 1 (12 ounce) jar chicken gravy
  • 1/2 cup milk
  • 2 tablespoons dijon mustard
  • 1/4 teaspoon dried thyme leaves
  • 1 cup water
  • 3/4 cup milk
  • 1/4 cup sour cream
  • 2 teaspoons dijon mustard
  • 1/2 teaspoon garlic salt
  • 2 cups mashed potato flakes
  • paprika

Recipe

  • 1 heat oven to 350.
  • 2 spray skillet with nonstick cooking spray.
  • 3 add chicken and onions; cook and stir until chicken is browned and no longer pink in center.
  • 4 stir in all remaining filling ingredients, mix well.
  • 5 spoon into ungreased 8 inch square glass baking dish.
  • 6 bring water to boil in medium saucepan.
  • 7 remove from heat.
  • 8 stir all remaining topping ingredients except paprika, mix well.
  • 9 spoon topping over chicken mixture.
  • 10 sprinkle with paprika.
  • 11 bake at 350 for 25 to 30 minutes.
