Chocolate Chip Twinkle Cookies

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 1 cup butter, softened
  • 3/4 cup powdered sugar
  • 1 egg yolk, beaten
  • 1 teaspoon vanilla extract
  • 1 1/4 cups flour
  • 3/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1 cup flaked coconut
  • 1 cup semi-sweet chocolate chips
  • sugar (in which to roll cookies)

Recipe

  • 1 preheat oven to 375f.
  • 2 in a large mixing bowl, cream butter.
  • 3 slowly add in the powdered sugar and mix.
  • 4 beat in the egg yolk and vanilla.
  • 5 in a medium bowl, whisk together flour, cornstarch and salt.
  • 6 slowly add flour mixture to the butter mixture, blend well.
  • 7 stir in the coconut and chocolate chips.
  • 8 shape dough into 1 inch balls and place on ungreased cookie sheet.
  • 9 slightly flatten with bottom of a glass dipped in sugar.
  • 10 bake for 10 minutes.
  • 11 let cool 5 minutes before removing to wire racks to cool completely.
