Chocolate Chip Twinkle Cookies

Ingredients
- 1 cup butter, softened
- 3/4 cup powdered sugar
- 1 egg yolk, beaten
- 1 teaspoon vanilla extract
- 1 1/4 cups flour
- 3/4 cup cornstarch
- 1/2 teaspoon salt
- 1 cup flaked coconut
- 1 cup semi-sweet chocolate chips
- sugar (in which to roll cookies)
Recipe
- 1 preheat oven to 375f.
- 2 in a large mixing bowl, cream butter.
- 3 slowly add in the powdered sugar and mix.
- 4 beat in the egg yolk and vanilla.
- 5 in a medium bowl, whisk together flour, cornstarch and salt.
- 6 slowly add flour mixture to the butter mixture, blend well.
- 7 stir in the coconut and chocolate chips.
- 8 shape dough into 1 inch balls and place on ungreased cookie sheet.
- 9 slightly flatten with bottom of a glass dipped in sugar.
- 10 bake for 10 minutes.
- 11 let cool 5 minutes before removing to wire racks to cool completely.
