Curry Chicken

Ingredients

  • Servings: 2
  • 6 chicken thighs
  • 2 tablespoons apple cider vinegar
  • 1 cup onion, cut in large squares
  • 1 1/2 cups celery, cut in large pieces
  • 1/2 cup fresh basil
  • 2 (8 ounce) cans great northern beans
  • 2 tablespoons olive oil
  • 1 tablespoon coarse black pepper
  • 1 teaspoon lemon pepper
  • 1 tablespoon garlic powder
  • 3 tablespoons curry powder
  • 1/2 teaspoon oregano flakes
  • salt

Recipe

  • 1 on high heat sautee onions and celery on olive oil.
  • 2 then add fresh basil, pepper, lemon pepper, garlic powder, curry and oregano flakes.
  • 3 once onions and celery are mixed with spices add chicken thighs.
  • 4 after mixing thighs with vegetables add beans.
  • 5 add vinegar.
  • 6 cover and let it simmer for about 15 minutes.
  • 7 add salt to taste.
