Collard Greens (vegan)

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 2 tablespoons canola oil
  • 1 small onion, minced finely
  • 3 slices fakin' bakin, minced (lifestream brand smoked tempeh strips)
  • 12 tablespoons vegetable broth
  • 2 tablespoons nutritional yeast flakes
  • 1/2 teaspoon liquid smoke
  • 1/2 teaspoon salt
  • 1 (16 ounce) bag chopped collard greens, frozen

Recipe

  • 1 saute the onion and salt in oil over medium heat until the onions are very soft and begin to caramelize.
  • 2 add the fakin bakin and keep stirring until the tempeh crisps.
  • 3 add the entire bag of frozen collards and the broth. stir to help the greens defrost faster.
  • 4 after the greens have softened up a bit, stir in the nutritional yeast flakes and liquid smoke.
  • 5 reduce heat and cover until the collards become tender. if there is too much broth in the bottom of the pan, cook for a few minutes with the lid off to let the liquid reduce.
  • 6 season with salt and pepper.
