Collard Greens (vegan)

Ingredients

- 2 tablespoons canola oil
- 1 small onion, minced finely
- 3 slices fakin' bakin, minced (lifestream brand smoked tempeh strips)
- 12 tablespoons vegetable broth
- 2 tablespoons nutritional yeast flakes
- 1/2 teaspoon liquid smoke
- 1/2 teaspoon salt
- 1 (16 ounce) bag chopped collard greens, frozen
Recipe
- 1 saute the onion and salt in oil over medium heat until the onions are very soft and begin to caramelize.
- 2 add the fakin bakin and keep stirring until the tempeh crisps.
- 3 add the entire bag of frozen collards and the broth. stir to help the greens defrost faster.
- 4 after the greens have softened up a bit, stir in the nutritional yeast flakes and liquid smoke.
- 5 reduce heat and cover until the collards become tender. if there is too much broth in the bottom of the pan, cook for a few minutes with the lid off to let the liquid reduce.
- 6 season with salt and pepper.
