Coffee Salad Rio

Total Time: 30 mins Preparation Time: 30 mins

Ingredients

  • 1 (3 ounce) package orange gelatin
  • 1 tablespoon instant decaffeinated coffee
  • 1 cup boiling water
  • 1/4 cup cold water
  • 1 (8 3/4 ounce) can crushed pineapple, undrained
  • 1/4 cup nuts, chopped
  • 1/2 cup flaked coconut
  • 1 (3 ounce) package cream cheese, softened

Recipe

  • 1 dissolve gelatin and instant coffee in boiling water.
  • 2 add cold water; blend in cream cheese.chill until thickened.
  • 3 fold in pineapple, nuts and coconut.
  • 4 spoon into a 1 quart mold or individual molds.chill until firm.
  • 5 can serve on crisp greens, if desired.
