- 3 lbs potatoes
- 16 ounces sour cream
- 1 (10 3/4 ounce) can cream of chicken soup
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup butter, melted
- 3 tablespoons finely chopped onions
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 cup crushed corn flakes
Recipe
- 1 in a 4-quart dutch oven cook potatoes in enough boiling water to cover for 20 to 25 minues or until just tender; drain. cool slightly. peel and coarsely shred or finely chop potatoes.
- 2 preheat oven to 350 degrees. in large bowl stir together sour cream, soup, cheese, melted butter, onion, salt and pepper.
- 3 gently stir in potatoes.
- 4 transfer to greased 3-quart rectangular baking dish.
- 5 sprinkle with cornflakes.
- 6 bake, covered, for 40 minutes.
- 7 uncover, bake about 15 minutes more until golden.
