Crispy Jicama Salad

Ingredients

  • Servings: 6
  • 4 cups jicama, diced
  • 2 large carrots, peeled and cut into strips
  • 1 red bell pepper, cut into strips
  • 1 small sweet onion, thinly sliced
  • 2 tablespoons cilantro, finely chopped
  • 6 tablespoons vegetable broth
  • 4 tablespoons seasoned rice vinegar
  • 2 tablespoons lime juice
  • 2 teaspoons stone ground mustard
  • 1/4 teaspoon salt
  • 1/2 teaspoon crushed red pepper flakes

Recipe

  • 1 in a salad bowl, combine the jimaca, carrot, bell pepper, onion, and cilantro and toss to mix.
  • 2 in a separate bowl, combine the remaining ingredients. pour over the vegetables and toss to mix place into refrigerator for two hours.
