Caribbean Rice

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 3 tablespoons olive oil
  • 1 medium onion
  • 1/3 cup flaked coconut or 1/3 cup shredded coconut
  • 2 cups chicken stock
  • 2 cups minute rice
  • 6 scallions, chopped
  • 0.75 (15 ounce) can mixed tropical fruit salad

Recipe

  • 1 chop onion, scallions, and canned fruit.
  • 2 saute onion in olive oil in a sauce pan until translucent.
  • 3 add coconut and saute until slightly golden.
  • 4 pour in chicken stock and bring to a boil.
  • 5 add rice and cook for 1-2 minutes.
  • 6 add fruit and fold into the rice.
  • 7 turn off heat, cover, and allow to set for 5 minutes.
  • 8 top with chopped scallions.
