Caribbean Rice

Ingredients
- Servings: 8
- 3 tablespoons olive oil
- 1 medium onion
- 1/3 cup flaked coconut or 1/3 cup shredded coconut
- 2 cups chicken stock
- 2 cups minute rice
- 6 scallions, chopped
- 0.75 (15 ounce) can mixed tropical fruit salad
Recipe
- 1 chop onion, scallions, and canned fruit.
- 2 saute onion in olive oil in a sauce pan until translucent.
- 3 add coconut and saute until slightly golden.
- 4 pour in chicken stock and bring to a boil.
- 5 add rice and cook for 1-2 minutes.
- 6 add fruit and fold into the rice.
- 7 turn off heat, cover, and allow to set for 5 minutes.
- 8 top with chopped scallions.
