Coconut Creamiest Pie

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 pie shell, baked according to directions, cooled
  • 2 cups milk
  • 1 (3 1/2 ounce) package instant vanilla pudding
  • 1 (3 1/2 ounce) package coconut pudding mix, instant
  • 1 cup flaked coconut
  • 2 egg whites
  • 1/2 cup sugar
  • 3/4 cup flaked coconut

Recipe

  • 1 pour 2 c milk and both packages of pudding mix in bowl. with mixer or whisk, mix until thickened (about 2 minutes). stir in coconut flakes. pour into prepared pie shell.
  • 2 meringue:.
  • 3 whip egg whites in glass bowl until stiff peaks form. mix in sugar. stir in 1/2 c coconut flakes. spread over pie. sprinkle with remaing coconut.
  • 4 bake in 325 degree oven for 15 to 20 minutes or until lightly browned.
  • 5 keep pie refrigerated.
