Crispy Fish With Black Bean, Oyster And Basil Sauce

Ingredients

- 1 tablespoon oil
- 1/3-1/2 cup cornstarch, plus
- 1/2 tablespoon cornstarch, divided
- 3 lbs tilapia fillets or 3 lbs flounder or 3 lbs sole
- 1 tablespoon oyster sauce
- 1 tablespoon black bean garlic sauce
- 1 cup chicken stock
- 1/2 tablespoon sugar
- 1/4 teaspoon dried basil
Recipe
- 1 place cornstarch in a bowl and dredge the fish through the cornstarch. shake off the excess.
- 2 add oil to pan and fry fish on both sides until fish flakes with a fork. set aside fish.
- 3 in the same pan, add oyster sauce, black bean sauce, chicken stock, sugar and basil.
- 4 mix 1/2 cornstarch to 1/2 tablespoon water in a small bowl and add to the sauce when it comes to a boil. cook until sauce thickens.
- 5 pour sauce over fish just before serving.
