Chocolate Coconut Cream Pie

Ingredients
- 2 ounces unsweetened chocolate
- 2 tablespoons butter
- 1 cup confectioners' sugar
- 1 1/2 cups flaked coconut
- 2/3 cup sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 4 eggs, separated
- 2 cups whole milk
- 2 teaspoons real vanilla
- 1 tablespoon melted butter
- 1 cup flaked coconut
- whipped cream
- chocolate shavings
Recipe
- 1 crust:melt chocolate and butter in small saucepan over low heat.
- 2 place sugar into bowl.
- 3 add butter/choc to sugar.
- 4 add coconut and mix well.
- 5 press into pie pan and chill.
- 6 filling: combine sugar, cornstarch, salt and egg yolks in a bowl.
- 7 add warm milk slowly to sugar mixture.
- 8 pour back into a sauce pan and cook over med.
- 9 heat stirring constantly until thickened.
- 10 add vanilla and coconut.
- 11 cool slightly.
- 12 pour filling into chilled chocolate crust.
- 13 cover filling w/ a thin coating of butter and cool.
- 14 serve w/ whipped cream covered w/ chocolate shavings.
