Chocolate Coconut Cream Pie

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • 2 ounces unsweetened chocolate
  • 2 tablespoons butter
  • 1 cup confectioners' sugar
  • 1 1/2 cups flaked coconut
  • 2/3 cup sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 4 eggs, separated
  • 2 cups whole milk
  • 2 teaspoons real vanilla
  • 1 tablespoon melted butter
  • 1 cup flaked coconut
  • whipped cream
  • chocolate shavings

Recipe

  • 1 crust:melt chocolate and butter in small saucepan over low heat.
  • 2 place sugar into bowl.
  • 3 add butter/choc to sugar.
  • 4 add coconut and mix well.
  • 5 press into pie pan and chill.
  • 6 filling: combine sugar, cornstarch, salt and egg yolks in a bowl.
  • 7 add warm milk slowly to sugar mixture.
  • 8 pour back into a sauce pan and cook over med.
  • 9 heat stirring constantly until thickened.
  • 10 add vanilla and coconut.
  • 11 cool slightly.
  • 12 pour filling into chilled chocolate crust.
  • 13 cover filling w/ a thin coating of butter and cool.
  • 14 serve w/ whipped cream covered w/ chocolate shavings.
