Chicken Cheesecake W/ Stove Top Stuffing Crust

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 1 (6 ounce) box chicken flavor stuffing mix
  • 1 cup orange juice
  • 1/2 cup water
  • 1/4 cup margarine
  • 12 ounces ricotta cheese
  • 1/4 teaspoon black pepper
  • 2 tablespoons margarine
  • 1/4 cup green bell pepper, chopped
  • 1/4 cup red bell pepper, chopped
  • 1 tablespoon parsley flakes
  • 1/4 cup toasted pecans, chopped
  • 5 eggs
  • 2 tablespoons flour
  • 2 teaspoons grated romano cheese
  • 2/3 cup chopped leeks or 2/3 cup onion
  • 2 cloves chopped garlic
  • 1 1/2 cups chopped cooked chicken breasts
  • 1/4 teaspoon seasoning salt
  • 1 teaspoon grated parmesan cheese
  • 2 tablespoons chopped chives

Recipe

  • 1 make stuffing according to package directions.
  • 2 press in the bottom and sides of a 9 inch springform pan.
  • 3 preheat oven to 350 degrees.
  • 4 blend together cheeses, eggs, flour, salts & pepper until smooth.
  • 5 in a skillet melt margarine, add leeks, peppers, garlic and chives and cook until soft about 5 minutes.
  • 6 allow to cool then add cheese mixture.
  • 7 stir in parsley and chicken.
  • 8 pour into pan, smooth top and put pecans on top and bake for 30 minutes.
