Chicken Cheesecake W/ Stove Top Stuffing Crust

Ingredients
- 1 (6 ounce) box chicken flavor stuffing mix
- 1 cup orange juice
- 1/2 cup water
- 1/4 cup margarine
- 12 ounces ricotta cheese
- 1/4 teaspoon black pepper
- 2 tablespoons margarine
- 1/4 cup green bell pepper, chopped
- 1/4 cup red bell pepper, chopped
- 1 tablespoon parsley flakes
- 1/4 cup toasted pecans, chopped
- 5 eggs
- 2 tablespoons flour
- 2 teaspoons grated romano cheese
- 2/3 cup chopped leeks or 2/3 cup onion
- 2 cloves chopped garlic
- 1 1/2 cups chopped cooked chicken breasts
- 1/4 teaspoon seasoning salt
- 1 teaspoon grated parmesan cheese
- 2 tablespoons chopped chives
Recipe
- 1 make stuffing according to package directions.
- 2 press in the bottom and sides of a 9 inch springform pan.
- 3 preheat oven to 350 degrees.
- 4 blend together cheeses, eggs, flour, salts & pepper until smooth.
- 5 in a skillet melt margarine, add leeks, peppers, garlic and chives and cook until soft about 5 minutes.
- 6 allow to cool then add cheese mixture.
- 7 stir in parsley and chicken.
- 8 pour into pan, smooth top and put pecans on top and bake for 30 minutes.
