Bran Muffins

Ingredients
- 1 large eggs or 1/4 cup egg substitute
- 1/4 cup sugar
- 1 3/4 cups nonfat milk
- 1 1/2 tablespoons margarine, melted
- 2 cups all-bran cereal (shredded type, not flakes)
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Recipe
- 1 preheat the oven to 400°f.
- 2 prepare a 12-cup muffin tin with nonstick pan spray or line the muffin cups with paper liners.
- 3 beat the egg in a medium bowl.
- 4 add the sugar, milk, and margarine; beat well.
- 5 stir in the bran.
- 6 allow to stand 2 minutes for the bran to soften.
- 7 sift the dry ingredients together into a small bowl; add to the bran mixture.
- 8 stir just until blended.
- 9 divide the batter among the 12 muffins cups; each will be about 2/3 full.
- 10 bake 20 to 25 minutes, until a toothpick inserted in the center of a muffin comes out clean.
