Black Bean And Sweet Potato Burrito

Ingredients

- 1/2 large sweet potato
- 1 cup black beans
- 1 garlic clove
- 1/2 onion
- 1/2 cup corn
- 1 teaspoon cumin
- hot pepper flakes
- 1/2 cup shredded cheese, to taste
- salt and pepper
Recipe
- 1 preheat oven to 350.
- 2 steam bake the sweet potatoes for an hour. let cool before peeling and cutting. cut them into bite size chunks and add them to a mixing bowl.
- 3 to the sweet potatoes, add the drained and rinsed black beans, corn, and salsa. gently combine.
- 4 spoon the sweet potato mixture into the tortillas, roll and place seam side down in the baking dish. repeat for all the tortillas. add the shredded cheese over the sauce.
- 5 bake at 350 for 25 minutes, or until cheese has melted and sauce is bubbly.
- 6 let cool slightly before serving.
- 7 serve sweet potato black bean enchiladas with veggie or fruit.
