Banana-coconut Pancakes

Ingredients

  • Servings: 6
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sweetened flaked coconut
  • 1/4 cup light brown sugar
  • 1/2 cup butter, melted
  • 3 bananas, mashed
  • 3/4 cup buttermilk
  • 1 teaspoon vanilla

Recipe

  • 1 in a large bowl, whisk together flour, baking powder, cinnamon, baking soda, salt and coconut.
  • 2 in another bowl, whisk together brown sugar, melted butter, mashed bananas, buttermilk, and vanilla.
  • 3 using a rubber spatula fold the banana mixture into the dry ingredients until no trace of flour remains.
