Banana-coconut Pancakes

Ingredients

- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sweetened flaked coconut
- 1/4 cup light brown sugar
- 1/2 cup butter, melted
- 3 bananas, mashed
- 3/4 cup buttermilk
- 1 teaspoon vanilla
Recipe
- 1 in a large bowl, whisk together flour, baking powder, cinnamon, baking soda, salt and coconut.
- 2 in another bowl, whisk together brown sugar, melted butter, mashed bananas, buttermilk, and vanilla.
- 3 using a rubber spatula fold the banana mixture into the dry ingredients until no trace of flour remains.
