Baked Coconut Custard Pie

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 1 (9 inch) pie crusts
  • 1 (13 1/2 ounce) can coconut milk
  • 1 tablespoon cornstarch
  • 4 large eggs
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 1/4 teaspoon salt
  • 3/4 cup flaked coconut

Recipe

  • 1 prebake pie crust.
  • 2 reduce oven temperature to 350°f (175°c).
  • 3 beat eggs, sugar, vanilla extract, coconut extract and salt until well mixed. set aside.
  • 4 mix 1/4 cup of coconut milk with cornstarch in a medium saucepan until cornstarch is completely dissolved.
  • 5 add remaining coconut milk over low heat & stir constantly - do not boil. cook until sauce begins to thicken. remove from heat.
  • 6 pour custard into the pie shell. sprinkle with coconut.
  • 7 bake 25 - 30 minutes or until the custard is set.
  • 8 serve warm or cold.
