Apricot Roasted Chicken

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs chicken parts
  • 1/4 cup apricot preserves
  • 2 tablespoons wine (or chicken broth)
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ginger
  • 1/4 teaspoon red pepper flakes
  • 2 green onions, chopped

Recipe

  • 1 preheat oven to 375.
  • 2 place chicken in a 13" x 9" baking dish; set aside.
  • 3 in a small saucepan over medium heat, cook preserves, wine, honey, soy sauce, oil, pepper, ginger, red pepper flakes, and green onion just until bubbly.
  • 4 evenly pour over the chicken pieces. bake for 45-55 minutes or until chicken is no longer pink.
