Apricot Roasted Chicken

Ingredients

- 1 1/2 lbs chicken parts
- 1/4 cup apricot preserves
- 2 tablespoons wine (or chicken broth)
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon ginger
- 1/4 teaspoon red pepper flakes
- 2 green onions, chopped
Recipe
- 1 preheat oven to 375.
- 2 place chicken in a 13" x 9" baking dish; set aside.
- 3 in a small saucepan over medium heat, cook preserves, wine, honey, soy sauce, oil, pepper, ginger, red pepper flakes, and green onion just until bubbly.
- 4 evenly pour over the chicken pieces. bake for 45-55 minutes or until chicken is no longer pink.
