- 2 tablespoons light ranch salad dressing
- 2 egg whites
- 6 tablespoons cornmeal
- 1/4 cup grated parmesan cheese
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground red pepper
- 1/8 teaspoon salt
- 4 -6 ounces catfish fillets
- cooking spray
- lemon wedge
Recipe
- 1 preheat oven to 425°f.
- 2 combine dressing and egg whites, whisk well.
- 3 combine cornmeal, parmesan, flour, pepper and salt in shallow dish.
- 4 pat fish dry, dip in egg mixture and dredge in cornmeal mixture.
- 5 place fish on a baking sheet coated with cooking spray.
- 6 bake 8-12 minutes each side until lightly browned and fish flakes easily.
- 7 serve with lemon wedges.
