Collard Greens

Ingredients

  • Servings: 2
  • 1 lb collard greens, tough stems discarded, leaves chopped
  • 1 tablespoon medium onion, chopped
  • 1 large garlic clove, minced
  • 1 teaspoon bacon fat
  • 1 tablespoon olive oil
  • 1 tablespoon dark sesame oil (dynasty or comparable)
  • 1 pinch chili pepper flakes
  • 2 pinches salt
  • 2 pinches sugar

Recipe

  • 1 use a large skillet with a tight fitting cover. melt bacon fat and heat olive oil on medium heat. sauté onion until transparent, a couple of minutes. add garlic and and sauté until fragrant, about 20 seconds.
  • 2 mix in the greens, sesame oil, chili pepper flakes, salt, and sugar. cover and cook until tender, 8-10 minutes.
  • 3 serve with barbecue sauce.
