Chunky Potato Soup

Ingredients

  • Servings: 12
  • 3 medium red potatoes
  • 2 cups water
  • 1 small onion
  • 3 tablespoons butter or 3 tablespoons margarine
  • 3 tablespoons flour
  • crushed red pepper flakes
  • ground black pepper
  • 3 cups milk
  • 1/2 teaspoon sugar
  • 1 cup cheddar cheese, shredded
  • 1 cup cooked ham, cubed

Recipe

  • 1 peel potatoes and cut into 1 inch cubes.
  • 2 cook the potatoes in the 2 cups water until tender.
  • 3 drain, reserving 1 cup of the liquid.
  • 4 add more water if necessary to measure 1 cup.
  • 5 set potatoes aside.
  • 6 peel and chop onion.
  • 7 melt butter in saucepan over medium heat.
  • 8 add onion to saucepan and cook stirring frequently until onion is tender and translucent, not brown.
  • 9 add flour to saucepan and season with pepper flakes and pepper to taste.
  • 10 cook 3-4 minutes.
  • 11 gradually add potatoes, reserved liquid, milk and sugar to saucepan.
  • 12 add cheese and ham.
  • 13 simmer over low heat for 30 minutes, stirring frequently.
