Chunky Potato Soup

Ingredients

- 3 medium red potatoes
- 2 cups water
- 1 small onion
- 3 tablespoons butter or 3 tablespoons margarine
- 3 tablespoons flour
- crushed red pepper flakes
- ground black pepper
- 3 cups milk
- 1/2 teaspoon sugar
- 1 cup cheddar cheese, shredded
- 1 cup cooked ham, cubed
Recipe
- 1 peel potatoes and cut into 1 inch cubes.
- 2 cook the potatoes in the 2 cups water until tender.
- 3 drain, reserving 1 cup of the liquid.
- 4 add more water if necessary to measure 1 cup.
- 5 set potatoes aside.
- 6 peel and chop onion.
- 7 melt butter in saucepan over medium heat.
- 8 add onion to saucepan and cook stirring frequently until onion is tender and translucent, not brown.
- 9 add flour to saucepan and season with pepper flakes and pepper to taste.
- 10 cook 3-4 minutes.
- 11 gradually add potatoes, reserved liquid, milk and sugar to saucepan.
- 12 add cheese and ham.
- 13 simmer over low heat for 30 minutes, stirring frequently.
