Christmas Zucchini Bread

Ingredients
- 1 cup cooking oil
- 3 eggs, beaten
- 2 cups zucchini, grated
- 2 teaspoons vanilla
- 2 cups sugar
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 1/2 cups coconut flakes
- 1 cup pecans, chopped
Recipe
- 1 preheat oven to 350 degrees.
- 2 mix oil, eggs, zucchini, and vanilla.
- 3 add sugar, flour, soda and cinnamon, blending well.
- 4 stir in coconut and pecans.
- 5 bake in greased loaf pans about an hour or until a toothpick tests "clean".
- 6 cool 15 minutes in bread pans.
- 7 remove from pans-i wrap mine in foil and slice the loaves just before serving.
