Chickpea Chili

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 large onion, minced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 cups cooked chickpeas
  • 1 1/2 cups tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon red pepper flakes
  • 2 cups hot cooked rice
  • 1 cup nonfat yogurt
  • 1 cup diced green pepper
  • 1 cup diced tomato
  • 1 cup shredded lettuce

Recipe

  • 1 in a saucepan over medium heat cook the onions and garlic in the oil until translucent.
  • 2 stir in the chickpeas, tomato sauce, chili powder, cumin, oregano and red pepper.
  • 3 simmer, uncovered, for about 30 minutes.
  • 4 serve over rice, topped with yogurt, peppers, tomatoes and lettuce.
