Chickpea Chili

Ingredients

- 1 large onion, minced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 cups cooked chickpeas
- 1 1/2 cups tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/8 teaspoon red pepper flakes
- 2 cups hot cooked rice
- 1 cup nonfat yogurt
- 1 cup diced green pepper
- 1 cup diced tomato
- 1 cup shredded lettuce
Recipe
- 1 in a saucepan over medium heat cook the onions and garlic in the oil until translucent.
- 2 stir in the chickpeas, tomato sauce, chili powder, cumin, oregano and red pepper.
- 3 simmer, uncovered, for about 30 minutes.
- 4 serve over rice, topped with yogurt, peppers, tomatoes and lettuce.
