Chicken Cucumber Tacos With A Sour Cream Tomato Sauce

Ingredients

- 8 flour tortillas
- 1 lb boneless skinless chicken breast
- 3 tomatoes
- 1 1/2 cups sour cream
- 1 cucumber
- 1 lemon
- 1 1/2 tablespoons coriander
- 1 teaspoon red pepper flakes
- 1 1/2 tablespoons cayenne
- vegetable oil
- salt and pepper
Recipe
- 1 begin by putting a tbs of oil into a medium sized skillet on medium high heat and another large pan with 1/4 inch of oil on the bottom on medium high heat.
- 2 once hot begin putting the tortillas in the large skillet one at a time until slightly crispy. after one is done, repeat until all are finished. and set on a plate with paper towels.
- 3 cut up chicken breast into one inch pieces and put in medium skillet with 1 tbs of cayenne and cook until tender. about 10 minutes, give or take.
- 4 cut off both ends of the cumcumber and grate it.
- 5 sauce: in a coffee or spice grinder, grind together the coriander, red pepper flakes and 1/2 tps of cayenne till a fine powder.
- 6 in a food proccessor combine sour cream, juice of 1 lemon, the tomatoes and the powder made above.
- 7 now, build your taco!
