Chicken And Apple Breakfast Sausages

Ingredients

  • Servings: 10
  • 4 teaspoons olive oil
  • 1 cup chopped apple
  • 1 cup chopped green onion
  • 1/2 cup quinoa
  • 8 ounces ground chicken or 8 ounces turkey
  • 1 1/4 cups cooked quinoa, cooled
  • 2 teaspoons dried sage
  • 1 1/2 teaspoons dried thyme
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1 large egg, lightly beaten
  • 1 tablespoon honey or 1 tablespoon pure maple syrup
  • cooking spray

Recipe

  • 1 in large skillet, heat half the olive oil over medium heat. sauté apple and green onion, 4-5 minutes until onion is just softened. transfer to a large bowl and wipe out skillet.
  • 2 add quinoa flakes to skillet and cook until golden and fragrant. add to apple mixture.
  • 3 also add chicken, cooked quinoa, sage, thyme, salt, pepper, egg and honey, stirring to combine.
  • 4 add remaining oil to skillet and heat over medium. make 10 patties. cook 3 minutes per side or until no longer pink inside.
