Chicken And Apple Breakfast Sausages

Ingredients

- 4 teaspoons olive oil
- 1 cup chopped apple
- 1 cup chopped green onion
- 1/2 cup quinoa
- 8 ounces ground chicken or 8 ounces turkey
- 1 1/4 cups cooked quinoa, cooled
- 2 teaspoons dried sage
- 1 1/2 teaspoons dried thyme
- 1 teaspoon sea salt
- 1/4 teaspoon freshly cracked black pepper
- 1 large egg, lightly beaten
- 1 tablespoon honey or 1 tablespoon pure maple syrup

Recipe
- 1 in large skillet, heat half the olive oil over medium heat. sauté apple and green onion, 4-5 minutes until onion is just softened. transfer to a large bowl and wipe out skillet.
- 2 add quinoa flakes to skillet and cook until golden and fragrant. add to apple mixture.
- 3 also add chicken, cooked quinoa, sage, thyme, salt, pepper, egg and honey, stirring to combine.
- 4 add remaining oil to skillet and heat over medium. make 10 patties. cook 3 minutes per side or until no longer pink inside.
