Caribbean Jerk Chicken Packets

Ingredients
- Servings: 4
- 4 chicken breasts, boneless, skinless
- 8 ounces caribbean jerk marinade (i use kc masterpiece)
- 4 medium red potatoes, washed, thinly sliced with the skin on
- 1 large onion, sliced into rings
- garlic, minced to taste
- 1 (15 ounce) can diced tomatoes with jalapenos
- 1 cup caribbean jerk marinade, divided
- red pepper flakes, to taste (optional)
- splash pickapeppa sauce (optional)
Recipe
- 1 place chicken breast in large zip lock baggie and add jerk marinade. allow to sit for at least 1 hour -- overnight even better! taking 2 sheets of foil per person -- spray foil -- add chicken, and divide remaining ingredients between each of the four packets. add 1/4 cup of marinade to each packet and splash of pickapeppa if using cook on the grill on low heat for 30 minutes -- or until juices are clear.
