Caribbean Jerk Chicken Packets

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 chicken breasts, boneless, skinless
  • 8 ounces caribbean jerk marinade (i use kc masterpiece)
  • 4 medium red potatoes, washed, thinly sliced with the skin on
  • 1 large onion, sliced into rings
  • garlic, minced to taste
  • 1 (15 ounce) can diced tomatoes with jalapenos
  • 1 cup caribbean jerk marinade, divided
  • red pepper flakes, to taste (optional)
  • splash pickapeppa sauce (optional)

Recipe

  • 1 place chicken breast in large zip lock baggie and add jerk marinade. allow to sit for at least 1 hour -- overnight even better! taking 2 sheets of foil per person -- spray foil -- add chicken, and divide remaining ingredients between each of the four packets. add 1/4 cup of marinade to each packet and splash of pickapeppa if using cook on the grill on low heat for 30 minutes -- or until juices are clear.
