Cabbage And Rice Soup

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 7
  • savoy cabbage or green cabbage, 1 head
  • oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1/2 teaspoon basil
  • 1 pinch oregano
  • 1/4 teaspoon crushed red pepper flakes
  • salt
  • 2 (15 ounce) cans tomato sauce
  • 1/4 cup grated cheese (pecorino-romano)
  • cooked rice

Recipe

  • 1 core cabbage and cut into bite sized pieces.
  • 2 cover with water in a large pot and boil, covered for 45 minutes.
  • 3 meanwhile, saute remaining ingredients, except rice and cheese, in oil until tender.
  • 4 add cooked cabbage to sauce and thin out to soup consistency with the cabbage water.
  • 5 add cheese just before serving.
  • 6 spoon soup and some rice into each bowl.
