Braised Kale With Corn

Total Time: 17 mins Preparation Time: 5 mins Cook Time: 12 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1 bunch kale, washed stemmed and roughly chopped
  • salt and pepper
  • crushed red pepper flakes
  • 6 garlic cloves, finely chopped
  • 2 cups chicken stock
  • 1/2 lemon, juice of
  • 1 small onion, thinly sliced
  • 1 (10 ounce) package frozen corn, defrosted

Recipe

  • 1 heat a large deep skillet over medium heat, add oil and onion cook stirring occasionally for 2 minutes. add garlic and crushed red pepper flakes. cook stirring occasionally for 1 minute. add kale, corn, stock and salt and pepper to taste. cook stirring occasionally for 10 minutes. add lemon juice, stir and cook 1 more minute.
