Black Beans And Peaches

Total Time: 2 hrs 10 mins Preparation Time: 10 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 1 (15 ounce) can black beans (drained)
  • 2 large ripe peaches (peeled)
  • 1 small red onion
  • 1 -2 garlic clove
  • 1 teaspoon cilantro
  • 1/2 teaspoon red pepper flakes
  • 1 lime, juice of
  • 2 teaspoons apple cider vinegar
  • 1/4 teaspoon salt
  • black pepper

Recipe

  • 1 drain beans and place in a medium mixing bowl.
  • 2 peel peaches and chop into small chunk and add to beans.
  • 3 chop onion, crush garlic and add to beans.
  • 4 add remaining ingredients and toss gently until well combined. cover with plastic wrap and refrigerate for 2 hours.
  • 5 serve as a side dish or with tortilla chips.
