Arkansas Mud Cake

Ingredients

- 1 cup butter or 1 cup margarine
- 4 eggs
- 1 cup moist-style coconut flakes
- 2 cups sugar
- 1 1/2 cups all-purpose flour, sifted
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 cup chopped nuts
- 13 ounces marshmallow cream
- 1/2 cup butter or 1/2 cup margarine
- 6 tablespoons milk
- 1/3 cup unsweetened cocoa powder
- 4 cups confectioners' sugar
- 1 cup nuts, chopped
Recipe
- 1 using electric mixer, and in a large bowl, cream butter.
- 2 slightly beat eggs and add to butter.
- 3 mix well.
- 4 add coconut sugar, flour, cocoa, vanilla, and nuts; mix together.
- 5 this is a heavy batter.
- 6 do not beat.
- 7 spread batter in greased 9x13x2 inch pan.
- 8 bake at 350 ¡f for about 45 minutes.
- 9 as soon as cake is taken from oven, spread marshmallow creme over top.
- 10 cool for 20 minutes.
- 11 to prepare frosting, mix together all frosting ingredients, except nuts, using slow speed of mixer.
- 12 pour over marshmallow creme.
- 13 top with nuts.
