Cheery Cherry Macaroons

Ingredients
- 1 1/2 cups sugar
- 1 1/3 cups shortening
- 2 eggs
- 1 teaspoon almond extract
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 1/2 cups flaked coconut
- 1 cup of drained maraschino cherry, chopped
Recipe
- 1 preheat oven to 375 degrees.
- 2 in a mixing bowl, cream sugar and shortening together.
- 3 add eggs and almond extract and mix well.
- 4 combine flour, soda, powder and salt and gradually add to creamed mixture.
- 5 stir in coconut and cherries, this will take a bit because the dough is very stiff.
- 6 drop by rounded teaspoonfuls 2 inches apart onto greased or non stick cookie sheets.
- 7 bake for 10 to 12 minutes or until light golden brown.
- 8 cool on racks.
