Cheery Cherry Macaroons

Total Time: 22 mins Preparation Time: 10 mins Cook Time: 12 mins

Ingredients

  • 1 1/2 cups sugar
  • 1 1/3 cups shortening
  • 2 eggs
  • 1 teaspoon almond extract
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups flaked coconut
  • 1 cup of drained maraschino cherry, chopped

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 in a mixing bowl, cream sugar and shortening together.
  • 3 add eggs and almond extract and mix well.
  • 4 combine flour, soda, powder and salt and gradually add to creamed mixture.
  • 5 stir in coconut and cherries, this will take a bit because the dough is very stiff.
  • 6 drop by rounded teaspoonfuls 2 inches apart onto greased or non stick cookie sheets.
  • 7 bake for 10 to 12 minutes or until light golden brown.
  • 8 cool on racks.
