Carb Killer Zucchini Crust Pizza

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 4
  • 2 large zucchini (grated)
  • salt (as needed)
  • 4 eggs (beaten)
  • 1/2 cup whole-grain wheat flour or 1/2 cup wheat germ
  • 1 cup mozzarella cheese (grated)
  • 1 cup parmesan cheese (grated)
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1 tablespoon olive oil
  • 1/2 lb ground beef
  • 1/2 lb ground turkey
  • 1/4 cup parsley (minced)
  • 2 teaspoons fennel seeds
  • 1 teaspoon crushed red pepper flakes
  • salt & fresh ground pepper (to taste)
  • 1/8 teaspoon dried thyme
  • 2 garlic cloves (minced)
  • 1/4 cup dry red wine
  • 1/4 lb mozzarella cheese (shredded)

Recipe

  • 1 place zucchini in a colander. salt. let stand 10 minutes.
  • 2 rinse. drain well.
  • 3 heat oven 400.
  • 4 combine zucchini with the eggs, flour, cheeses, herbs and 1 tablespoons olive oil.
  • 5 press out into a rouns circle on a sprayed pizza pan.
  • 6 bake 20 minutes.
  • 7 brush with 1 tablespoons olive oil.
  • 8 bake 15 more minutes. remove. set aside.
  • 9 in a skillet, brown the beef and turkey.
  • 10 add the parsley, fennel, pepper flakes, salt, pepper, thyme and garlic. saute 2 minutes.
  • 11 add wine. deglaze until evaporated.
  • 12 let cool.
  • 13 scatter on crust. top with cheese.
  • 14 bake 20 minutes. let stand 5 minutes.
