Carb Killer Zucchini Crust Pizza

Ingredients

- 2 large zucchini (grated)
- salt (as needed)
- 4 eggs (beaten)
- 1/2 cup whole-grain wheat flour or 1/2 cup wheat germ
- 1 cup mozzarella cheese (grated)
- 1 cup parmesan cheese (grated)
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 tablespoon olive oil
- 1 tablespoon olive oil
- 1/2 lb ground beef
- 1/2 lb ground turkey
- 1/4 cup parsley (minced)
- 2 teaspoons fennel seeds
- 1 teaspoon crushed red pepper flakes
- salt & fresh ground pepper (to taste)
- 1/8 teaspoon dried thyme
- 2 garlic cloves (minced)
- 1/4 cup dry red wine
- 1/4 lb mozzarella cheese (shredded)
Recipe
- 1 place zucchini in a colander. salt. let stand 10 minutes.
- 2 rinse. drain well.
- 3 heat oven 400.
- 4 combine zucchini with the eggs, flour, cheeses, herbs and 1 tablespoons olive oil.
- 5 press out into a rouns circle on a sprayed pizza pan.
- 6 bake 20 minutes.
- 7 brush with 1 tablespoons olive oil.
- 8 bake 15 more minutes. remove. set aside.
- 9 in a skillet, brown the beef and turkey.
- 10 add the parsley, fennel, pepper flakes, salt, pepper, thyme and garlic. saute 2 minutes.
- 11 add wine. deglaze until evaporated.
- 12 let cool.
- 13 scatter on crust. top with cheese.
- 14 bake 20 minutes. let stand 5 minutes.
