Cornflake Enchiladas

Ingredients
- Servings: 2
- 4 large tortillas (or 8 small)
- 2 cups tomato sauce
- 1 lb ground beef
- 1 medium onion, chopped fine
- 1/2 cup mushroom, chopped fine
- 1 teaspoon butter
- 1 cup corn flakes, crushed
- 1 cup grated cheddar cheese
- 1 teaspoon spices (i use mrs dash)
Recipe
- 1 melt butter in fry pan.
- 2 add onion and mushrooms and saute til tender.
- 3 add ground beef.
- 4 fry until browned.
- 5 add one cup of tomato sauce, 1 cup cornflakes and 1/2 cup shredded cheddar cheese.
- 6 mix well and heat.
- 7 place several tablespoons in the centre of a tortilla shell.
- 8 fold in ends, and wrap sides around.
- 9 place 1 cup tomato sauce in bottom of greased 9 x 13 pan.
- 10 place filled enchiladas (seam side down) on top of tomato sauce.
- 11 pour remaining meat mixture on top.
- 12 bake 15 minutes 350f.
- 13 add 1/2 cup shredded cheese to top and place back in oven until melted (approx 5 mins).
