Cornflake Enchiladas

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 4 large tortillas (or 8 small)
  • 2 cups tomato sauce
  • 1 lb ground beef
  • 1 medium onion, chopped fine
  • 1/2 cup mushroom, chopped fine
  • 1 teaspoon butter
  • 1 cup corn flakes, crushed
  • 1 cup grated cheddar cheese
  • 1 teaspoon spices (i use mrs dash)

Recipe

  • 1 melt butter in fry pan.
  • 2 add onion and mushrooms and saute til tender.
  • 3 add ground beef.
  • 4 fry until browned.
  • 5 add one cup of tomato sauce, 1 cup cornflakes and 1/2 cup shredded cheddar cheese.
  • 6 mix well and heat.
  • 7 place several tablespoons in the centre of a tortilla shell.
  • 8 fold in ends, and wrap sides around.
  • 9 place 1 cup tomato sauce in bottom of greased 9 x 13 pan.
  • 10 place filled enchiladas (seam side down) on top of tomato sauce.
  • 11 pour remaining meat mixture on top.
  • 12 bake 15 minutes 350f.
  • 13 add 1/2 cup shredded cheese to top and place back in oven until melted (approx 5 mins).
