Baked Breakfast Spuds

Ingredients

  • Servings: 4
  • 1/2 tablespoon dried onion flakes
  • 1/8 teaspoon black pepper
  • 6 fluid ounces campbell's healthy request cream of broccoli soup
  • 8 fluid ounces nonfat sour cream
  • 4 ounces sharp cheddar cheese, grated
  • 1 lb potato, cooked and cubed
  • 1/2 cup corn flakes, crushed,for topping

Recipe

  • 1 in a large bowl combine all ingredients except the corn flakes.
  • 2 mix well and pour into a casserole dish sprayed with non-stick cooking spray.
  • 3 sprinkle crushed corn flakes on top.
  • 4 bake at 350°f for 45 to 60 minutes.

Bouquet Of Cookies

Ingredients

  • 1 cup cake flour
  • 2 tablespoons cake flour
  • 1/2 teaspoon baking soda
  • 1/2 cup sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup soft butter
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 (6 ounce) package chocolate chips
  • 1/2 cup chopped pecans
  • 1/4 cup flaked coconut
  • 36 lollipop sticks

Recipe

  • 1 preheat oven to 375°.
  • 2 combine flour and baking soda in a small bowl and set aside.
  • 3 in another small bowl, combine and brown sugar and press out lumps.
  • 4 in mixer bowl, combine butter and sugars until light and fluffy.
  • 5 add salt, egg and vanilla and mix well.
  • 6 add dry ingredients and mix.
  • 7 stir in chocolate chips, pecans and coconut.
  • 8 drop by rounded teaspoonfuls onto cookie sheet lined with aluminum foil and space 1 1/2" apart.
  • 9 push a lollipop stick about 2/3 of the way into each cookie.
  • 10 the free end of the stick should rest on the foil.
  • 11 if needed, gently press dough around stick to seal in place.
  • 12 bake 8 to 10 minutes.
  • 13 cool on pan for 30 minutes, then remove with spatula.
  • 14 cool completely, then wrap each cookie in clear plastic wrap.
  • 15 gather wrap at back of cookie and tie with a pretty ribbon in color of your choice.

  • 36 chocolate wafer cookies
  • 5 tablespoons unsalted butter, melted
  • 1 (14 ounce) bag sweetened flaked coconut, about 5 1/3 cups
  • 1 (14 ounce) can sweetened condensed milk
  • 4 egg whites
  • 1 1/4 cups sliced almonds
  • 1 1/4 cups bittersweet chocolate chips

Recipe

  • 1 preheat oven to 350.
  • 2 line a 9x13 pan with non stick foil that extends over the edges of the pan.
  • 3 pulse cookies in a food processors until they are fine crumbs.

  • 3 cups thinly sliced carrots

  • 1 beef bouillon cube (or equivalent base)
  • 3 teaspoons parsley flakes
  • 1/2 teaspoon sage
  • 3 large bay leaves
  • 1 teaspoon garlic powder
  • 1 teaspoon salt

  • unsalted butter or margarine
  • mashed potatoes

Recipe

  • 1 sauté onions, celery and carrots in unsalted butter or margarine in large skillet just until tender.

Carrot And Beet Salad With Coconut Lime Dressing

  • 1/2 cup cashews
  • 4 cups carrots, grated coarsely (about 4 large carrots)
  • 3 cups beets, grated coarsely (about 3 beets)

  • 14 ounces coconut milk
  • 1 lime, juice of (about 1/4 cup)
  • kosher salt, to taste
  • 1/2 cup cilantro, chopped (plus 1/4 cup for garnish)

  • 1 dry-roast the cashews in a pan, then chop coarsely.

  • 1 small onion, cut into thin wedges
  • 2 teaspoons butter or 2 teaspoons margarine
  • 1/3 cup tomato chutney or 1/3 cup mango chutney
  • 1/2 teaspoon snipped fresh rosemary or 1/4 teaspoon dried rosemary, crushed
  • 1/8 teaspoon crushed red pepper flakes
  • 8 ounces round brie cheese (about 4 inches in diameter)
  • breadsticks or assorted crackers or french bread, slices

  • 1 for caramelized onions, cook onion in hot butter or margarine in a small saucepan, covered, over low heat about 15 minutes or until tender and golden, stirring occasionally.

  • 1/3 cup sugar substitute (splenda granular)
  • 1/3 cup bourbon whiskey

  • 5 cups biscuit mix

  • 1 cook bacon crisp. reserve.
  • 2 sauté onion, shallot, garlic, apple and cabbage for 20 minutes.

Baked Blueberry, Lemon And Almond Pudding

  • 2 lbs blueberries or 2 lbs blackberries
  • 3 -6 ounces sugar (or to taste)
  • 1 lemon, zest of
  • 4 ounces self raising flour
  • 2 ounces ground almonds, dry fried to toast them
  • 3 ounces caster sugar
  • 3 ounces butter, melted and cooled
  • 1 large egg
  • 1/4 pint buttermilk or 1/4 pint milk
  • 1 lemon, zest of
  • 5 drops almond extract
  • 2 tablespoons sliced almonds

  • 1 preheat oven to 350°f.
  • 2 butter a 9x12 inch ovenproof dish.
  • 3 put berries, sugar and 1 lemon zest into dish and mix.
  • 4 sieve the flour into a bowl.
  • 5 add cooled ground almonds and sugar.
  • 6 beat in the melted butter, egg, buttermilk, lemon zest and almond extract.
  • 7 spoon this over the fruit leaving about 1 inch of fruit uncovered around the sides.

Ingredients

  • Servings: 6
  • 8 large beets, peeled and quartered
  • 10 shallots, peeled
  • 1 tablespoon olive oil
  • 1/3 cup dry red wine
  • 2 teaspoons fresh chopped thyme (or 1/2 teas dried thyme)
  • 1 teaspoon hot pepper flakes (or less)
  • salt and pepper
  • 2 tablespoons honey
  • 3 tablespoons balsamic vinegar
  • 1 green onion, chopped

  • 1 pre heat oven to 375f degrees.
  • 2 place beets& shallots in a 9x13" oven proof dish.
  • 3 in a bowl whisk together oil, wine, thyme, pepper flakes, salt& pepper.
  • 4 pour over the beets and shallots, toss until evenly coated.
  • 5 cover dish with foil and bake for 1 hour.

Ingredients

  • 1 lb dried navy beans or 1 lb great northern bean
  • 1/2 lb dried black beans
  • 1 large fryer chicken, bone in,skinned and cut up.
  • 8 tablespoons olive oil
  • 4 tablespoons flour
  • 5 cloves garlic, minced finely
  • 3 medium yellow onions, medium chop
  • 2 cups green chilies, chopped,fresh is better but canned works
  • 1 large bell pepper, in a 1/4 inch dice
  • 4 tablespoons cumin
  • 4 tablespoons dried oregano
  • 2 teaspoons black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 cup chopped fresh cilantro
  • salt

Recipe

  • 1 rinse and drain the beans in separate pots, (because they cook in different times) cover the beans with about an inch of cold water and bring to a boil.
  • 2 cover the boiling pots and remove from the heat.
  • 3 allow them to soak off heat, for 2 hours.
  • 4 put the chicken pieces in a stock pot and cover with about 2 inches of cold water, bring to a boil then simmer for about an hour.
  • 5 remove the chicken and allow to cool, bone it and chop to about 1/4 inch.
  • 6 (save the stock!).
  • 7 drain each of the bean pots and add your new chicken stock to each to cover the beans by at least 1 inch.
  • 8 if there’s not enough stock, add water.
  • 9 bring the beans to a boil, then reduce to a simmer and cook until each is just getting tender.
  • 10 when the beans are done, drain into a large bowl.
  • 11 in a large stock pot, add 4tbs olive oil, onion, garlic and chilies.
  • 12 over a low heat, saute until the onions are just translucent.
  • 13 remove from the pot and set aside.
  • 14 add the flour and an equal amount of the olive oil to the pot and mix until smoothly blended.
  • 15 over a low heat, continue stirring until it starts to bubble.

  • 1 jalapeno pepper (to taste) (optional)
  • 2 large garlic cloves

  • 1/4 cup apple cider vinegar
  • 1/4 cup balsamic vinegar
  • 1/4 cup maple syrup
  • 1/4 cup bourbon
  • 1/4 cup water
  • black pepper, freshly ground, to taste
  • 1/2 teaspoon red chili pepper flakes (chipotle or ancho to taste)

  • 1 preheat heavyweight saucepan or dutch oven on medium heat. the pot's capacity should be around 3-quarts.
  • 2 prep work: cut bacon into 1-inch strips. cut onion in half, and then cut each half into 1/4-inch slices. dice jalapeno pepper (for less heat, remove ribs and seeds). chop garlic cloves.
  • 3 add bacon to pot. fry until fat renders and bacon is lightly browned and beginning to crisp. transfer bacon to plate lined with paper towels and let drain. pour off all but one tablespoon of bacon fat.
  • 4 add sliced onions and jalapeno peppers to pot. sauté on medium heat until tender, about 5 to 10 minutes. stir in chopped garlic and sauté until fragrant, about 10 seconds.

  • 1 warm the refried beans gently over low heat. cut the butternut squash in half crosswise at the narrowest point. cut each half in half again lengthwise. peel each section with a vegetable peeler or a flexible sharp knife. use a teaspoon to scrape out the seeds and strings. cut into 1/2- inch dice. heat large nonstick skillet over high heat. add olive oil. when it smokes, add squash cubes and toss well. sprinkle with 1 teaspoon salt, cinnamon, cumin and black pepper. saute over high heat, tossing frequently, until browned outside and tender but not mushy inside, about 10 minutes. to serve, heat tortillas quickly one by one in a very hot dry skillet, about 10 seconds per side. assemble tacos by spooning in black beans, topping with sauteed squash, sliced pickled shallots, cilantro sprigs, diced serranos, and cream. roll up and serve 2 per person.
  • 2 for the pickled shallots: combine the vinegar, wine, brown sugar, peppercorns, mustard, chile flakes, and salt in a medium saucepan. stir over low heat until the sugar is dissolved. add the shallots and bring to a boil. reduce to a simmer and cook 5 minutes. set aside to cool completely in the liquid.

Cheesy Hash Brown Potatoes

  • 4 russet potatoes, cut into large cubes (about 1-1/2-inch)
  • 3 large tomatoes, chopped (or use a 28-ounce can of diced tomatoes, drained)
  • 3/4 cup chicken broth
  • 1 1/2 cups coconut milk

  • 1 season the chicken pieces with seasoning salt or regular salt and pepper.

  • 3 -4 serrano chilies, diced (depending on how hot you want your chile, don't add if you want mild chile)
  • 1/4 cup vegetable oil or 1/4 cup bacon fat

  • 24 ounces chicken broth (approximately)
  • 1 (12 ounce) can rotel tomatoes & chilies
  • 1 cup water
  • 1 teaspoon cumin
  • 1/2 teaspoon pepper
  • 1/2 teaspoon curry powder
  • 1 teaspoon season-all salt
  • 1 teaspoon fresh cilantro or 1 teaspoon dried cilantro
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 2 garlic cloves, crushed
  • 1/2 teaspoon salt and pepper
  • 1/4 cup flour (approx.)
  • 1 small yellow onion
  • 1 -2 lb lamb (diced or ground)

Recipe

  • 1 in large stainless kettle, brown lamb in bacon fat or vegetable oil.
  • 2 (bacon fat has better flavor.) cook on medium heat till meat is slightly pink.
  • 3 add diced onion and garlic, cook till soft.
  • 4 add flour and stir, browning flour as you would a roux (rue).
  • 5 add some of your water if flour is too thick, keep stirring till it bubbles.
  • 6 add chicken broth.
  • 7 add the rest of the ingredients and bring to a bubble, then turn heat to low.

  • 9 if your chile is too thin, add more flour.

  • 1 cup bean water, saved from cooked beans
  • 1/2 cup brewers compressed yeast cake (from the health food store)
  • 1 cup onion, chopped
  • 1 tablespoon olive oil
  • 2 cups rolled oats
  • 1 teaspoon dried parsley (optional)

Recipe

  • 1 soak the beans for approximately 8-10 hours and rinse and put them with fresh water every 2-3 hours that helps with the gas formation, the more you rinse. if soaking overnight, just try to change the water at least once before going to bed.
  • 2 rinse off the beans and cook in crock pot until tender, usually approximately 6-8 hours on high. save 1 cup of water that the beans were cooked in, drain beans.
  • 3 while beans are cooling a bit, saute' chopped onion in the olive oil, until soft and slightly golden.
  • 4 in blender, blend beans, water, and salt.
  • 5 in large bowl, mix oats and brewers yeast flakes with onions and then pour in the blended beans, into this mixture. at this point mix in parsley or any type of seasonings that you want to try.

  • 1 teaspoon worcestershire sauce
  • 1/4 cup jalapeno juice
  • 3/4 cup molasses
  • 1 tablespoon chicken base
  • 1 tablespoon cumin
  • 1/3 cup garlic, minced
  • 2 tablespoons granulated garlic
  • 1 tablespoon oregano
  • 3 teaspoons celery seeds
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon sage
  • 4 bay leaves
  • 1/4 cup folgers coffee
  • 2 pinches crushed red pepper flakes
  • 4 tablespoons granulated onion

Recipe

  • 1 method combine ingredients.
  • 2 cook on low heat (in a nonstick pan), covered, for a couple of hours.
  • 3 stir occasionally.
  • 4 this part of the recipe has a lot of flavor and just a little bit of heat. it is fine for those of you that cannot handle the heat.
  • 5 add more crushed red pepper for more heat.
  • 6 for more of a honey flavor add 1/2 cp honey.
  • 7 you can add these ingredients after the sauce has been cooked. i would cook up the sauce as is then adjust for heat and or honey flavor.
  • 8 on a side note if you want this to be truly vegetarian, replace the chicken base with worcestershire sauce. use an 1/8 of a cup total.
  • 9 chill, use as needed. :).
