Buttermilk Bran Muffins

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups wheat bran, flakes (not breakfast cereal)
  • 1 cup dried currants or 1 cup raisins
  • 1/4 cup molasses
  • 1/4 cup honey
  • 1 cup buttermilk
  • 2 eggs
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice

Recipe

  • 1 preheat oven to 425°f if using a dark,non-stick muffin tin, preheat to 400°f.
  • 2 combine the bran, the currants and the wet ingredients through the vanilla in a bowl, stir well.
  • 3 set aside for 20 minutes, or refrigerate up to overnight.
  • 4 whisk together remaining ingredients in a large bowl.
  • 5 stir in the bran mixture until barely combined.
  • 6 spoon batter into well greased muffin tin (or use baking cups).
  • 7 bake for 15 to 20 minutes, or until a toothpick inserted into muffin comes out clean.
  • 8 remove from pans immediately and cool on a rack.
