Buttermilk Coconut Pie

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 1 1/4 cups sugar
  • 2 tablespoons all-purpose flour
  • 1/2 cup butter, melted
  • 3 eggs, beaten
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 3 1/2 ounces flaked coconut, divided
  • 1 unbaked 9-inch pie shell

Recipe

  • 1 combine the sugar and flour in a large bowl.
  • 2 add melted butter, eggs, buttermilk, vanilla and 2/3 of the coconut.
  • 3 mix well.
  • 4 pour mixture into shell.
  • 5 sprinkle with remaining coconut.
  • 6 bake at 325 degrees for 1 hour or until set.
