Buttermilk Coconut Pie

Ingredients

- 1 1/4 cups sugar
- 2 tablespoons all-purpose flour
- 1/2 cup butter, melted
- 3 eggs, beaten
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 3 1/2 ounces flaked coconut, divided
- 1 unbaked 9-inch pie shell
Recipe
- 1 combine the sugar and flour in a large bowl.
- 2 add melted butter, eggs, buttermilk, vanilla and 2/3 of the coconut.
- 3 mix well.
- 4 pour mixture into shell.
- 5 sprinkle with remaining coconut.
- 6 bake at 325 degrees for 1 hour or until set.
