Caramel Cornflake Cookies

Ingredients
- 125 g butter
- 1/2 cup brown sugar, firmly packed
- 1/2 cup caster sugar
- 1/2 cup desiccated coconut
- 3 cups corn flakes or 3 cups gluten-free corn flakes, lightly crushed
- 1 egg, lightly beaten
- 1/2 cup finely chopped mixed nuts
Recipe
- 1 preheat oven to 180°c or 350°f
- 2 melt the butter in a large pan. then add sugars and cook, stirring, until combined. remove from heat
- 3 add all of the remaining ingredients and stir gently until combined
- 4 place level tablespoons pf mixture, about 3cm apart , on lightly greased oven trays
- 5 bake in a moderate oven (180c / 350f) about 15 minutes or until golden brown
- 6 stand for 5 minutes before removing from trays to cool on a wire rack.
