Caramel Cornflake Cookies

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 125 g butter
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup caster sugar
  • 1/2 cup desiccated coconut
  • 3 cups corn flakes or 3 cups gluten-free corn flakes, lightly crushed
  • 1 egg, lightly beaten
  • 1/2 cup finely chopped mixed nuts

Recipe

  • 1 preheat oven to 180°c or 350°f
  • 2 melt the butter in a large pan. then add sugars and cook, stirring, until combined. remove from heat
  • 3 add all of the remaining ingredients and stir gently until combined
  • 4 place level tablespoons pf mixture, about 3cm apart , on lightly greased oven trays
  • 5 bake in a moderate oven (180c / 350f) about 15 minutes or until golden brown
  • 6 stand for 5 minutes before removing from trays to cool on a wire rack.
