Creamy Rice And Mushroom Bake

Ingredients

- 2 tablespoons margarine
- 3 cups mushrooms, sliced
- 1 small onion, chopped
- 2 garlic cloves, finely chopped
- 1 teaspoon worcestershire sauce
- 6 ounces cream cheese, softened
- 2 large eggs
- 1 (12 ounce) can evaporated milk
- 3 teaspoons dried parsley flakes
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 3 cups cooked rice
Recipe
- 1 preheat oven to 350º f.
- 2 grease 11 x 7-inch baking dish.
- 3 melt margarine in large skillet over medium heat.
- 4 add mushrooms, onion, garlic and worcestershire sauce; cook, stirring occasionally, for 3 to 4 minutes or until mushrooms are soft.
- 5 beat cream cheese and eggs in large mixer bowl until creamy.
- 6 mix in evaporated milk, parsley, salt, and pepper.
- 7 stir in rice and mushroom mixture.
- 8 pour into prepared casserole dish.
- 9 bake for 35 to 40 minutes or until set and light brown around edges.
