Burgundy Stew

Ingredients

  • Servings: 8
  • 1 large finely chopped onion
  • 2 cloves minced garlic
  • 1 lb boiling potato, peeled or unpeeled 3/4 inch cubes
  • 1 1/2 cups coarsely shredded cabbage
  • 1/4 cup uncooked long grain rice
  • 1 large sliced carrot
  • 1 1/2 cups defatted beef broth or 1 1/2 cups beef bouillon
  • 3/4 cup red wine
  • 1/4 cup ketchup
  • 2 tablespoons packed light brown sugar
  • 1/2 tablespoon apple cider vinegar
  • 1 1/2 teaspoons dried thyme
  • 1 teaspoon chili powder
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 1 -1 1/2 lb cubed beef stew meat

Recipe

  • 1 in a large crockpot, combine onion, garlic, potatoes, cabbage, carrot,and rice.
  • 2 add meat.
  • 3 in 4 cup measuring bowl, stir together broth, wine, ketchup, brown sugar, vinegar, thyme, chili powder, mustard, and black pepper.
