Apricot Coconut Filled Oat Bars

Ingredients
- 1 1/4 cups all-purpose flour
- 1 1/4 cups quick oats
- 1/2 cup sugar
- 3/4 cup butter, melted
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 1 (10 ounce) jar apricot preserves
- 1/2 cup flaked coconut
Recipe
- 1 heat oven to 350°.
- 2 in a large mixer bowl combine all crumb ingredients.
- 3 beat low speed, scraping bowl often, until mixture is crumbly, 1-2 minutes.
- 4 reserve 1 cup of mixture; press remaining mixture into a greased 13x9-inch pan.
- 5 spread the apricot preserves to within 1/2 inch from the edge of the crumb mixture.
- 6 sprinkle with crumb mixture and coconut.
- 7 bake 22-27 minutes, or until edges are lightly browned.
- 8 let cool completely before you cut into bars.
