Diabetic, Low-fat Chicken Littles

Ingredients

- 2 boneless skinless chicken breasts
- 1 egg
- 1/2 cup corn flake crumbs
- 1 teaspoon garlic salt
- 1 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/2 cup fresh, grated parmesan cheese
Recipe
- 1 preheat oven to 375 degrees f.
- 2 wash chicken very well in warm water.
- 3 set chicken pieces on several thicknesses of paper towel to dry.
- 4 wash your hands with very warm soapy water after handling the chicken.
- 5 place chicken breasts on plastic cutting board, and cut each piece into 1 inch squares.
- 6 (you should have about 32 squares).
- 7 beat egg until stiff.
- 8 fold in the rest of the ingredients with a fork.
