Creamy Roasted Red Pepper Pasta With Sausage

Ingredients

- 2 red bell peppers
- 1 -2 tablespoon olive oil
- 3 -4 garlic cloves, minced
- 2 -3 bratwursts, cooked and chopped
- 1 cup cream
- 1/4 teaspoon red pepper flakes
- salt, to taste
- ground black pepper, to taste
- 1/2 cup freshly grated parmesan cheese
- 12 ounces farfalle pasta (bow-tie)
- parmesan cheese (optional)
Recipe
- 1 char peppers over gas flame or in broiler until blackened on all sides. enclose in paper bag 10 minutes.
- 2 peel and seed peppers. transfer peppers to blender and puree until very smooth. season to taste with salt. (can be made 1 day ahead. cover and refrigerate.).
- 3 in large skillet, heat olive oil over medium heat. add garlic. stir in bratwurst and heat through.
- 4 add cream, red pepper puree, red pepper flakes, salt and pepper. stir in parmesan cheese.
- 5 boil pasta according to package directions. drain. stir pasta into red pepper cream mixture.
- 6 top with additional parmesan cheese.
