Creamy Roasted Red Pepper Pasta With Sausage

Ingredients

  • Servings: 4
  • 2 red bell peppers
  • 1 -2 tablespoon olive oil
  • 3 -4 garlic cloves, minced
  • 2 -3 bratwursts, cooked and chopped
  • 1 cup cream
  • 1/4 teaspoon red pepper flakes
  • salt, to taste
  • ground black pepper, to taste
  • 1/2 cup freshly grated parmesan cheese
  • 12 ounces farfalle pasta (bow-tie)
  • parmesan cheese (optional)

Recipe

  • 1 char peppers over gas flame or in broiler until blackened on all sides. enclose in paper bag 10 minutes.
  • 2 peel and seed peppers. transfer peppers to blender and puree until very smooth. season to taste with salt. (can be made 1 day ahead. cover and refrigerate.).
  • 3 in large skillet, heat olive oil over medium heat. add garlic. stir in bratwurst and heat through.
  • 4 add cream, red pepper puree, red pepper flakes, salt and pepper. stir in parmesan cheese.
  • 5 boil pasta according to package directions. drain. stir pasta into red pepper cream mixture.
  • 6 top with additional parmesan cheese.
