Crab Stuffed Mushrooms

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 1/2 lbs mushrooms (about 24)
  • 4 green onions, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons fresh basil, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 fresh green chile, seeded and finely chopped
  • 1 lb crabmeat, shelled and flaked
  • 2 tablespoons mayonnaise
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon freshly cracked black pepper
  • 6 ounces quality cheddar cheese, grated

Recipe

  • 1 wipe the mushrooms clean with a damp paper towel and remove the stems. place the mushroom caps in a lightly-oiled, shallow baking dish.
  • 2 mince the stems. combine all the remaining ingredients, including the minced stems, and mix well.
  • 3 spoon the mixture into the mushroom caps and bake in a preheated 350° oven for 15 minutes. serve warm. makes about 24 appetizers.
