Crab Stuffed Mushrooms

Ingredients
- 1 1/2 lbs mushrooms (about 24)
- 4 green onions, chopped
- 3 garlic cloves, minced
- 2 tablespoons fresh basil, chopped
- 1/4 cup fresh cilantro, chopped
- 1 fresh green chile, seeded and finely chopped
- 1 lb crabmeat, shelled and flaked
- 2 tablespoons mayonnaise
- 1 teaspoon dijon mustard
- 1/2 teaspoon freshly cracked black pepper
- 6 ounces quality cheddar cheese, grated
Recipe
- 1 wipe the mushrooms clean with a damp paper towel and remove the stems. place the mushroom caps in a lightly-oiled, shallow baking dish.
- 2 mince the stems. combine all the remaining ingredients, including the minced stems, and mix well.
- 3 spoon the mixture into the mushroom caps and bake in a preheated 350° oven for 15 minutes. serve warm. makes about 24 appetizers.
