Crab, Arugula And Lemon Garlic Mayo Sandwich

Ingredients

  • Servings: 2
  • 4 tablespoons mayonnaise
  • 1/2 garlic clove, minced
  • 1/2 teaspoon dijon mustard
  • 2 teaspoons fresh lemon juice
  • salt and pepper
  • 8 slices crusty bread
  • 1 1/2 ounces arugula
  • 12 ounces fresh crabmeat

Recipe

  • 1 place the mayonnaise in a bowl and beat in the garlic, mustard, lemon juice and a few chili flakes if you wish. season to taste.
  • 2 spread the lemon aioli onto all the slices of bread.
  • 3 arrange the arugula onto 4 of the slices of bread and pile the crabmeat on top.
  • 4 season to taste then sandwich with the remaining slices of bread.
  • 5 press down lightly, cut on the diagonal and serve.
