Crab, Arugula And Lemon Garlic Mayo Sandwich

Ingredients

- 4 tablespoons mayonnaise
- 1/2 garlic clove, minced
- 1/2 teaspoon dijon mustard
- 2 teaspoons fresh lemon juice
- salt and pepper
- 8 slices crusty bread
- 1 1/2 ounces arugula
- 12 ounces fresh crabmeat
Recipe
- 1 place the mayonnaise in a bowl and beat in the garlic, mustard, lemon juice and a few chili flakes if you wish. season to taste.
- 2 spread the lemon aioli onto all the slices of bread.
- 3 arrange the arugula onto 4 of the slices of bread and pile the crabmeat on top.
- 4 season to taste then sandwich with the remaining slices of bread.
- 5 press down lightly, cut on the diagonal and serve.
