Chocolate Island Cookies

Ingredients
- 1/2 cup shortening
- 1 cup brown sugar, packed
- 1 egg
- 3 (1 ounce) unsweetened chocolate squares, melted and cooled
- 1/4 cup strong brewed coffee
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 cup buttermilk
- 1/3 cup flaked coconut
- 1.5 (1 1/2 ounce) unsweetened chocolate squares, melted and cooled
- 1/4 cup sour cream
- 1 tablespoon butter, softened
- 1 -1 1/2 cup confectioners' sugar
- 2/3 cup flaked coconut
Recipe
- 1 in a mixing bowl, cream shortening and sugar.
- 2 add egg, chocolate and coffee.
- 3 mix well.
- 4 combine the flour, baking soda and salt.
- 5 add to creamed mixture, alternately with buttermilk.
- 6 stir in coconut.
- 7 drop by tablespoonfuls, 2 inches apart onto greased baking sheets.
- 8 bake at 375 degrees for 12-15 minutes or until edges are browned.
- 9 remove to wire racks to cool.
- 10 .for frosting, combine the chocolate, sour cream and butter in a small mixing bowl.
- 11 add enough of the confectioners' sugar to achieve the desired spreading consistency.
- 12 frost cooled cookies.
- 13 sprinkle with coconut.
