Chocolate Island Cookies

Total Time: 27 mins Preparation Time: 15 mins Cook Time: 12 mins

Ingredients

  • 1/2 cup shortening
  • 1 cup brown sugar, packed
  • 1 egg
  • 3 (1 ounce) unsweetened chocolate squares, melted and cooled
  • 1/4 cup strong brewed coffee
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup buttermilk
  • 1/3 cup flaked coconut
  • 1.5 (1 1/2 ounce) unsweetened chocolate squares, melted and cooled
  • 1/4 cup sour cream
  • 1 tablespoon butter, softened
  • 1 -1 1/2 cup confectioners' sugar
  • 2/3 cup flaked coconut

Recipe

  • 1 in a mixing bowl, cream shortening and sugar.
  • 2 add egg, chocolate and coffee.
  • 3 mix well.
  • 4 combine the flour, baking soda and salt.
  • 5 add to creamed mixture, alternately with buttermilk.
  • 6 stir in coconut.
  • 7 drop by tablespoonfuls, 2 inches apart onto greased baking sheets.
  • 8 bake at 375 degrees for 12-15 minutes or until edges are browned.
  • 9 remove to wire racks to cool.
  • 10 .for frosting, combine the chocolate, sour cream and butter in a small mixing bowl.
  • 11 add enough of the confectioners' sugar to achieve the desired spreading consistency.
  • 12 frost cooled cookies.
  • 13 sprinkle with coconut.
