- 2 cups flour
- 1 cup sugar
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 1 1/2 cups blueberries
- 1 cup flaked coconut
Recipe
- 1 preheat oven to 375 degrees. in mixing bowl, combine flour, sugar, baking powder, and salt. in separate bowl, beat eggs, milk and oil; stir into dry ingredients just until moistened. fold in blueberries. pour into greased 13x9" pan. sprinkle with coconut. bake for 22 to 24 minutes or until toothpick inserted in center comes out clean.
