Chile Rellenos

Ingredients

- 1 cup chopped onion
- 1 1/2 tablespoons butter
- 2 (5 ounce) cans chopped green chilies, drained
- 2 cups shredded cheddar cheese
- 1 cup shredded monterey jack pepper cheese
- 3 eggs
- 1 cup sour cream
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes
- 1 cup chopped seeded fresh tomato
Recipe
- 1 preheat oven to 350 degrees.
- 2 in a saucepan, stir and cook onions in butter until tender.
- 3 stir in green chilies; spoon evenly into a 8x8 inch square baking dish.
- 4 sprinkle with cheeses.
- 5 in a bowl, beat eggs lightly.
- 6 add sour cream, salt and pepper flakes; beat until blended.
- 7 spoon mixture over cheese.
- 8 sprinkle with chopped tomatoes.
- 9 bake about 40 minutes or until knife inserted in center comes out clean.
