Chile Rellenos

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 1 cup chopped onion
  • 1 1/2 tablespoons butter
  • 2 (5 ounce) cans chopped green chilies, drained
  • 2 cups shredded cheddar cheese
  • 1 cup shredded monterey jack pepper cheese
  • 3 eggs
  • 1 cup sour cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 1 cup chopped seeded fresh tomato

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in a saucepan, stir and cook onions in butter until tender.
  • 3 stir in green chilies; spoon evenly into a 8x8 inch square baking dish.
  • 4 sprinkle with cheeses.
  • 5 in a bowl, beat eggs lightly.
  • 6 add sour cream, salt and pepper flakes; beat until blended.
  • 7 spoon mixture over cheese.
  • 8 sprinkle with chopped tomatoes.
  • 9 bake about 40 minutes or until knife inserted in center comes out clean.
