Broccoli, Pepper And Rice Skillet With Soy Sausage

Ingredients

  • Servings: 4
  • 2 cups cooked brown rice or 2 cups wild rice
  • 3 cups broccoli florets
  • 1 red bell pepper, sliced thin
  • 0.5 (14 ounce) package soy sausage
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon oregano
  • salt and pepper
  • 1/2 cup crumbled gorgonzola

Recipe

  • 1 warm olive oil in a large skillet over medium heat. add broccoli and peppers and cook about 3 minutes.
  • 2 crumble sausage into pan; add garlic, oregano and crushed peppers, and cook another 2-3 minutes.
  • 3 add rice and cook until heated through.
  • 4 add salt and pepper to taste and stir in gorgonzola just before serving.
