Broccoli, Pepper And Rice Skillet With Soy Sausage

Ingredients

- 2 cups cooked brown rice or 2 cups wild rice
- 3 cups broccoli florets
- 1 red bell pepper, sliced thin
- 0.5 (14 ounce) package soy sausage
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1/2 teaspoon crushed red pepper flakes
- 1 teaspoon oregano
- salt and pepper
- 1/2 cup crumbled gorgonzola
Recipe
- 1 warm olive oil in a large skillet over medium heat. add broccoli and peppers and cook about 3 minutes.
- 2 crumble sausage into pan; add garlic, oregano and crushed peppers, and cook another 2-3 minutes.
- 3 add rice and cook until heated through.
- 4 add salt and pepper to taste and stir in gorgonzola just before serving.
